This receipe is really easy and great for making with the kids. It's also a great source of fibre so a fairly healthy cake to eat, I eat mine with a bit of marg and a cup of tea....
3 weetabix
175g brown sugar
175g mixed fruit (anything you like dates/raisins etc.)
300ml milk
Mix all the ingredients together and leave to soak overnight in the fridge (I've left it for just an hour or so and that's fine). Then pre-heat the oven to 170oc or gas mark 3. Add 200g of self raising flour and a beaten egg to the mixture and mix thoroughly. Pop into a gresed loaf tin and cook for 90 mins. Done!
